Pumpkin Bars

PREP TIME: 30 minutes COOK TIME: 30 minutes

INGREDIENTS:

Bars

  • 4 eggs
  • 1 c oil
  • 1 1/2 c sugar
  • 2 c (or 15 oz can) pumpkin
  • 2 c flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp cloves

Frosting:

  • 3 oz cream cheese, softened
  • 1 stick margarine
  • 1 tbsp milk
  • 1 tsp vanilla
  • 4 c powdered sugar

DIRECTIONS:

Bars:

Preheat oven to 350 degrees Fahrenheit.

Mix together all the bar ingredients with a mixer.

Pour batter into a greased and floured jelly roll pan (or cookie sheet).

Bake for 30 minutes. Use toothpick test to check doneness.

Cool.

Frosting:

Cream the first four frosting ingredients together.

Add powdered sugar gradually; mixing continuously until smooth.

Spread until smooth.

Spread over cooled bars.

Refrigerate.
